【動手做】Tiramisu 提拉米蘇的製作初體驗

Homemade tiramisuDon’t know since when, I have started enjoying very much Tiramisu. I like the taste of smooth mascarpone cheese and a little bit coffee flavored lady finger. When I still in Taiwan, I had never thought of trying to make Tiramisu. Simply because 1) I did not spend much time home, 2) mascarpone cheese cannot be found at supermarket next door.

不知道從何時開始,我就喜歡上這款義式甜點『提拉米蘇』;我喜歡她那 mascarpone 的溫潤柔順,及帶有一點咖啡苦味的手指餅乾。當還在台北時,身旁的饕友們也經常做出美味的提拉米蘇,但我就是不為所動地從未想過要自己做。想想,大概是因為覺得要買 mascarpone 不方便,以及自己沒有耐心做甜點的關係。
Nevertheless having moved to Milan, I found mascarpone cheese can be easily found at nearly every supermarket. I decided to try at least once. I selected the basic recipe from The Worldwide Gourmet, followed the method, and made one on Saturday for our guest.

但搬到米蘭來之後,經常在逛超市時就看到冷藏櫃裡一排的 mascarpone,就這麼地腦中升起想自己動手做提拉米蘇的念頭,趁著要招待 MBA 同學的機會,我在網路上挑選了一份食譜,然後按部就班地,完成了這個長得不好看但好吃的提拉米蘇。

Some recipes have Marsala wine as one of the ingredients but since I didn’t want to buy a bottle only for making once or twice tiramisu, S recommended me to use Vino Santo as substitute.

我挑選的提拉米蘇食譜是 http://tinyurl.com/2hf45v。我並沒有改變任何的材料及做法,唯一增加的是 vino santo。因為在這份食譜中沒有使用任何的酒類,但在大部分的提拉米蘇食譜中有,我可不想只為了做一次或兩次的提拉米蘇而買一瓶 marsala,因此跟S商量後,他建議我用家中有的 vino santo 來代替。

Few thoughts:
(1) It’s really tiring to try to beat egg white manually. I will buy an electric whisk in the future.
(2) Don’t put marsala or other similar wines into coffee before it is cold. Assume you don’t want to loose the nice special flavor of wine.
(3) Speed is very important when dipping lady finger into coffee. My first two lady fingers were in fact too wet to stay its shape.
(4) I will try to make it again!

初體驗後的心得感想:
(1) 完全手動地打蛋真的是很累人呀!看來還是去買一隻電動打蛋器比較划得來!
(2) 要等咖啡冷卻之後再倒入香醇的美酒唷,不然美酒的香味會隨著咖啡的高溫而揮發掉哩!
(3) 在將手指餅乾放入咖啡中時,速度真的是關鍵呀!我的第一、二號手指餅乾就是因為速度太慢,而便得太過濕軟。
(4) 哈,我還要再做一次提拉米蘇!

    恩,很好吃的樣子,自己做,真的很厲害耶..
    我是懶人+沒天份煮婦一枚。
    還是去買來吃比較快一點…哈哈…

    我是有閒主婦一枚,所以有空研究啦~再加上S都會適時地給予鼓勵,我才會努力為他下廚房啦…
    米蘭雖然也有糕點店,但總不比台北多也不方便,所以自己做還是比較快呢~

    成品不醜不醜哦,看圖就很想拿根湯匙挖來吃^++^
    不過做提拉米蘇小心會上癮哦,有幾位朋友初會做時都是一做再做,有一陣子我家冰箱總有朋友的提拉米蘇愛心。

    我想我也是會再多做幾次,因為第一次做總是覺得有不完美的地方,想第二次做就應該會比較美囉!現在做了也可以拿到語言學校去分給同學吃哩~哈哈~

    我曾經想照著食譜試做tiramisu,可是光看食譜的步驟就嚇到了,完全不敢動手。看到妳的tiramisu讓我想到好久沒吃,流口水…
    等一下來出門去買好了。XD

    相信我,真的很簡單啦~而且基本步驟一樣之外,其他的都可以自由變化哩~有電動打蛋器的話就可以試試囉~
